Directions:

1. In a small saucepan, melt butter. Add rosemary, parsley, garlic, salt and pepper.

2. Place chicken with breast side up on a rack in a roasting pan, tie drumsticks together with cooking twine.

3. Spoon half of the butter mixture over chicken.

4. Arrange vegetables around chicken, drizzle remaining butter mixture over vegetables.

5. Cover and bake at 350 F for 1 1/4 hours, basting every 30 minutes.

6. Uncover, bake one hour longer or until a meat thermometer reads 180 degrees, basting occasionally.

7. Cover and let stand 10 minutes before carving.

Spicy Roast Chicken

I did something similar to this some months back on a turkey, and it was remarkable. My full family loved it. It's a very extremely simple dish. It only takes a little while and some ingredients to prepare it ( once the chicken itself is unfroze ). All you do is prepare a rub ( more of a spice and flavoring paste, really, and cover the chicken in it. Naturally, the results taste far from basic. I am particularly proud of this one. More than anything, I am happy about it because it is my very own combination.

Dutch Oven Spicy Roast Chicken


one Onion, sliced
Tbsp Cayenne Pepper
Tbsp Cumin Powder
Cup cut Fresh Cilantro
4-5 green onions, sliced
Zest of one lemon
Juice of one Lemon
Olive Oil

OK, here's how you do it! Follow these steps in this chicken recipe and you'll really stun them on how talented of a cook you really are!

One thing I love to do with birds is to take a fork or pointy knife and poke holes in the skin, to allow more of the spice flavor to seep into the meat. I put the chicken, breast side up, in the bottom of the 12' deep dutch oven. I didn't check, to be honest...
Then I took the onions and the green onions and scattered them around the sides.
While the coals were getting hot, I took a little time to make the spice rub/paste. It's simple to do, actually. I just mixed all the ingredients in the second set, except the oil. You can adjust them to taste. If you like yours to be a little hotter, with more bite, add more Cayenne, etc...


Then, I took a fork and smeared that paste all overboard surfaces of the chicken.

Then I put it on the coals. Now, you have to keep a side fire going, some additional coals. The ones you commence with on your dutch oven are going to go out long before the chicken is done. So, about every 20 minutes or so, you add another 5-10 coals into the side fire. These catch fire from the ones that were in there, still burning before.

This chicken took around an hour and a half to get to the internal temperature of about 180. I just employed a thermometer stuck in the breast. It is the simplest way to tell if it's done.

Since it's done in the Dutch Oven, it comes out wet and steamed. The spices seep down in, and man, you will find out real quick why dutch oven cooking is so great! Likely my favorite roast chicken recipe ever! Follow the directions laid out for you and then make sure we know how you liked it!

  • 1/4 cup coconut milk
  • 1 tsp. salt
  • 1/4 cup yogurt
  • 3 tbsp. olive oil

Curry Chicken Spice Mix:

  • 1/2 tsp. cardamom
  • 1/4 tsp. turmeric
  • 2 tbsp. curry powder
  • 1/2 tsp. red pepper flakes
  • 1/4 tsp. pepper
  • 1 tsp. garam marsala
  • 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/4 tsp. cayenne powder
  • 1/2 tsp. cinnamon

First of all you have to make the Curry Chicken spice mix:

Get a knife, press and chop the garlic and chili, cut the onion and chop the chicken thighs into small pieces.

Fry your spices in oil:

Put three tablespoons of olive oil in a high heated large saucepan and add the spice mixture as soon as the oil is hot.
Stir it until the spices become brown and roasted – usually it takes a minute.
Take care of your saucepan because it will burn!

As soon as the spice mixture got browned, put the onions, a teaspoon salt, pepper and ginger into it.

When the onion becomes darker add the garlic and cook it for one minute, but don't forget to take care of the garlic because if it burns it becomes bitter.
Now you should see a dark sauce with your ingredients.

Put the salted chicken into the saucepan and roast it and put enough oil into the pot if it's not enough.

When the chicken gets brown start carefully adding the wine.
Of course, the wine has an aroma, but you'll also notice all the brown bits on the bottom of the saucepan.
These little pieces are full of flavor, and you want them included in the final product.
So if you add the wine, use a spoon start scratching in the liquid.

When the wine starts to boil off reduce heat to medium.

Now add the coconut milk and put turn temperature to low, cover and cook for about 15 minutes.

Finally turn off the heat and stir in the yogurt.

Serve the Curry Chicken Recipe with rice.

Chicken Biryani: The very Indian way of the preparation

Originated in Iran, the word ‘Biryani' is derived from the Persian word. It is a Classic recipe – different Biryanis are prepared by combinations of rice, different spices and condiments and meat. Mother's Recipe offers RTC spice mix for making delicious Chicken Biryani – here's the recipe that unfolds the secret of a tasty Chicken Biryani.

Ingredients:

Basmati rice - 2 cups

Chicken pieces - 3/4 kg

Onion - 3 large, sliced

Yoghurt - 1 cup

Ginger paste - 1 tsp

Garlic paste - 1/2 tsp

Green chilli paste - 1 tsp

Tomato puree - 1/2 cup

Red chilli powder - 2 tsp

Turmeric powder - 1 tsp

Cumin powder (roasted) - 1 tsp

Cardamom powder - 1/2 tsp

Garam masala powder - 2 tsp

Milk - 1/2 cup

Saffron - a pinch

Coriander powder - 1 tsp

Green coriander leaves - 2 tbsp, chopped

Water - 3 1/2 cups

Oil - 7 tbsp

Salt as required

Method:

1. Make a mixture with tomato puree, yoghurt, ginger garlic paste, green chilli paste, red chilli powder, turmeric powder, roasted cumin powder, garam masala powder, coriander powder and salt.

2. Take the chicken and marinade it in the same mixture. Let it rest for 3-4 hours.

3. Put oil in a pan, heat it and fry onions till they turn golden brown.

4. Now, to this add the marinated chicken and cook the entire mixture for 10 mins.

5. Next in a pressure cooker, take the rice and add 3 1/2 cups of water to it. Also, take the saffron, mix with the milk and add to the rice.

6. Finally, add the cardamom powder and the chicken pieces, along with the marinade.

7. Mix all the ingredients gently, cover with the cooker lid and pressure cook for 1 whistle.

Garnish with green coriander leaves and serve hot.
